I lift twice a week (Monday and Thursday)
If I want to gain muscle mass is it acceptable to eat more calories than I burn on those days and eat regularly the other days? Or do I have to keep eating more calories for the rest of the week as well?

I think you need to eat just a little more in the off days.
Training more days a week is really worth it though.

Your average daily calorie intake is supposed to be +500 calories according to the sticky. Yes you don't have to follow that to the letter every day, you just should end up with that average at the end of the week. You can even fast on rest days if you want, doesn't matter that much.
It doesn't matter that much how much you eat on the individual days as long as you don't binge eat so hard that your body can't utilize the nutrients and you just shit out most of them as diarrhea.
