In his videos he talks about not being able to drink enough water so part of it is water weight. Also he's probably lost a little bit of muscle as well. Seriously, it takes some strength to move around that fat ass.

Me again. You've also got to take into consideration the actual size of his stomach as well. It can't take up nutrients as well as it used to so that has a part in it.
They also remove half the small intestines in a gastric bypass surgery, the weight of which you aren't accounting for.

As others anon pointed out, most of it is water weight specially considering his massive weight and size.
I would estimate that like half of that shit is pure water. That would result in a 5409 / 2 = 2704.5 cals deficit a day, that would result in him eating 1k cal a day, it seems reasonable considering he is post op, recovering and can't eat that much.
