If I eat at maintainence everyday but eat 2000 calories above maintainence one day a week, will I only gain muscle on that day? Or will it be the same as eating 300 above maintainence each day?

This is not recommended. Protein synthesis after working out peaks after 24 hours, you should maintain a surplus everyday.
Biochemically it would be similar. Not 1:1 but close enough. However having a binge day each week probably would be a bad idea in the long run, especially psychologically.
