How much time and dedication does Oly lifting actually require to become proficient in? If my goal is to become strong and explosive overall and become a good olympic lifter, not in a competitive sense, is it even worthwhile to invest any time into it, or is it a waste of labor and time better spent on other things if I'm past 18?

To become proficient? A long time uncoached, a few years with a coach. Depends on how much time you invest into mobility and regular training.
