If I'm a 5'10" 230 pound tub of fat ass, how much carb is safe for me to cut out of my diet at once? Does it even matter or is a slow decline the best bet to not fuck my shit up?
At the moment I'm only trying to hit 20-40g of carbs a day, but is it okay to go lower, or is that even too high? At this point I'm willing to try anything.

that's probably good. don't go into keto, and with that amount of carb you shouldn't
if you want to cut more carbs out due to high daily calorie intake, I'd suggest finding lower calorie foods in general. cutting out carbs completely is pants on head stupid.
300 grams of carbs is a good minimum to target.
