Okay mate, because you can smell the shampoo most of the time after you put it on, your brain chooses to ignore it because it doesnt mean danger (like smoke would). Everyone else can smell it but your nose will instead look for other new smells but

Also, some cologne, eau de toilette, shampoo, whatever, evaporates faster than others.
Some shampoos wont smell after a couple hours because the chemical component of the smell has evaporated. Same with fragrance.
Best advice, loos for reviews for the specific brand / product you want to use, or look for shampoos with lasting smell.
