what exactly is water weight and why does everyone keep saying that the 10 pounds i lost in the last 5 weeks of eating right is just water weight.

You definitely lost weight my dude, but your body can retain a lot of water. If you are eating 500 under your TDEE don't worry about it.
Water weight matters for day to day fluctuations. If you weigh yourself once a week you'll have a more realistic idea of the rate you are losing.

because I don't really eat a lot, i only got fat because i eat a lot of dunk and sweets and soda which i cut from my diet.
i think i eat about a little over 1000 calories a day.
