As an 18 year old, is my metabolism going to ruin my gains? I've been exercising almost every day for a month now, and while there's certainly more definition on my body, if only a little, I'm still skinny.

Get amount of food which calorie count in it that is enough to go 500 surplus of your daily calorie usage + rest calories
Eat said food within day, do same next day

If you can't eat 3k calories in CHICKEN AND RICE in a day, or PASTA in a day, then try eating it in something more calorie dense, like peanut butter on your sandwiches, milk with more fat in it than regular milk, etc.
NO ONE can eat 5k calories a day in broccoli, but many many people can eat 5k calories a day in chocolate milkshake (sugary as fuck AND a liquid? calorie bomb)
