Is there any point going to the gym once a week? I work a labor job and by the end of my workday I'm usually too tired to go to the gym because I lift shit for 10 hours a day

Still better than not lifting at all. And you can reach the weekly volume necessary to make gains, even though in a slower rate than most people, don't let people fool you. As you are doing low frequency, the best option is to high volume and high intensity. May take a while but eventually it will improve your health and you performance at work. Trust me you will adapt.
