On some days when I just really don't feel like lifting heavy, or I know I won't be able to progress will it do any harm if I just go at like 60% max and go for heavy heavy volume.
I've heard people say this will negatively affect how much I can lift the following workout but that kind of seems stupid to me? Anyone able to shed light?

It's better than not lifting

The sun.
Lifting > Not lifting at all
Great question
I always wanted to that myself
I mean, if i do 3 sets of 8 reps for bench, but fail the last set and only do 6 reps, if a add one more set the total volume will compensate?
Ok, so basically the odd volume session couldn't have any negative effect on overall strength.
That happened to me yesterday. Got close to my working sets and just felt like shit, felt like I was being crushed under the bar. Dropped the weight a bit and went full Tom Platz sets. I'll get back to you on whether it drops my overall strength or not. I'm guessing probably not.

Try to do the same volume
Weight x sets x reps x time per set
Do that calculation for both. In theory it should keep you stable.
