Fat on the other hand, is about 9 calories per gram. Which means you'd need to consume around 389g of fat to gain 1 pound of body mass. 389g is around 0.858 pounds.

It doesn't. Each pound of human adipose tissue is one "jar" that can hold 3,500 calories.
When you eat 4,099 calories (one pound of olive oil) you fill 1.17 jars. But the jars themselves have weight which is the cellular/vascular stuff so your body can actually use/store the calories for later. You don't count the weight of empty fat cells because that would be stupid.
