Provided you get enough protein/fat and eat an adequate amount of vegetables, is there actually anything wrong with bulking on a heavy carb diet?
I can easily finish a whole baguette in one sitting, this is a good way to add calories. What's the harm?

Not particularly wrong. But it's all depending on the ratios you used and what type of carbs
IE: If you're a man such as myself, you'd need to be bulking on 3,500 calories a day
30% has to be fat in order to optimize Testosterone production. About 2 grams of protein per kilogram of LBM is fine. Again if you're a man like me That'd be about 180 grams. Let's just say 180 grams just to be sure. That'd be about 432 grams of carbs.
That'd be a ratio of 30/20/50 fat/protein/carbs. Which is completely fine.
One of the catches is, optimally, you'd want as little sugar as possible. So no low quality carbs like soda or whatnot. But if you have a 3500 calorie diet. You'd get pretty fucking bored of eating chicken and rice every single day. So it's all up to your tolerance of food
