What is /fit/ advice on oils&fats?

Sticky basically says "olive oil is good" and to avoid trans and saturated fats, but not much else. So I was just hoping you guys can share your info on adding oils&fats to a meal as well as choosing between fatty and lean foods.

Extra virgin olive oil is good because it's mostly MUFA and doesn't have much omega 6 and it contains a lot of antioxidants.

Seed oils are mostly omega 6 which oxidizes easily and you probably already get too much of it. Also most seed oils don't have much antioxidants.

Why are plant based oil&fats recommended so much?

It seems intuitive to assume that these oils had no place at all in the evolution of man. So why are they regarded as being healthy?

Monos look like thick oils or very soft solids (saturated fats are hard at room temp, polyuns are very liquid, monos in between).
Best sources are olive oil, ghee, grass-fed butter, coconut oil, and avocado oil.

That's good enough for most people. If you want to get extremely specific to better suit you goals, look into the different lengths of fatty acid chains (medium, long, and very long chains). Medium length chains provide quick energy (quick being relative to fats: still slower than carbs) and produce a greater amount of ketones faster, so they're great if your goal is ketosis. Best source of medium chains is MCT oil (literally short for medium chain triglyceride oil), any health-food store will have it. However, medium chains don't keep you full for as long (again, relative to fats: still much longer than carbs). For that long chains are better, very long chains are best. This is because they have to be broken down into medium chains before they may be utilized by the body, prolonging the period of perceived fullness, but also decreasing the ketogenic effect and putting your body under additional oxidative stress (especially with very long chains). I'd recommend (if your goal is ketosis) eating some medium chains in the morning, such as in bulletproof coffee or something similar (basically MCT oil, ghee/butter, and coffee), allowing some time (2-4 hours) before you eat anything else so your body is thoroughly in a ketogenic state, and then eating some longer chain fats for fullness the rest of the day. Alternatively, if you can stand the hunger pangs, try only eating medium chain fats every 4 hours or so. Each dose of medium chain fats induces ketosis, which your body then keeps going by burning your additional fat stores. Ingesting medium chains only is basically priming your fat stores to be burned for energy. Combined with fasting, it's the fastest way to lose fat.
