My goal is to lose weight AND get stronger, but I don't want to completely gimp myself doing StrongLift as a beginner, despite the fact it seems I'm doing linear increases relatively ok. I've been hitting the 1600 calories limit so far.

Why the fuck are you at a 1,400 kcal deficit? Keep to like 500-800 kcal deficit.
Yes, lift weights. Yes, do a beginner program. Yes, you can increase your lean body mass as a beginner lifter while losing weight. Yes, you will get stronger as well.

Ok I've adjusted my daily to
- 2200-2400 calories
- 60-70 g fat
- 190-200g protein
- 180-200g carb

If you want to lift heavier and lose fat at the same time you'll probably want to look into a body recomp. It's very slow and not as easy as cutting or bulking, but well worth it for the fact that you never lose strength.
