When cutting am I better off doing a bodybuilding routine as opposed to strength routine?
And is cutting carbs and fasting one day the optimal way of dropping the fat fast

How big are you? If you drop the weight too fast you'll be left with saggy skin and stretch marks, you want to maintain a steady progressive weight loss. Anoktger thing is if you cut too many calories out or at such a deficit your lifts will be negatively impacted.
General rule of thumb I usually follow is eating 600 under my goal if I'm wanting to cut. That way I still get the most out of my lifts due to not being starved.

Forgot to mention either routine is fine but personally I'd throw in body weight accessories to compliment a strength routine. Your main focus should be maintaining a your diet since that will have the largest impact on your weight loss not to mention body weight might be a little difficult if you're big.
Literally getting and staying /fit/ is 85% diet 15% working out.
Oh and start doing yoga. Daily. Like as soon as you get up in the morning. You'll thank me later.

Woah there I'm not that big, I'm 105kg about 20% bf. I'm wanting a pretty fast way of cutting, don't mind taking a hit on the lifts for now as I can build them back up quick which is why I was wondering if bodybuilding was best approach as strength training will hit me pretty hard on a deficit
