I wonder if overall human health has declined or not. It seems to me we are capable, with modern knowledge and technology ,able to be much healthier or much less healthy than possible in ancient times

We're healthier. Weaker, but healthier. Sure our food is less nutritious and we get less exercise, but 2000 years ago the average man was a half starved, malnourished, diseased, injured, parasitically infested, dying mess and died at 30 because of it.
