Gotta ask yourself, why olympic lifting? It's a lot of form and people who teach it are real dogmatic about it, and been doing it from a early age. I just do the power versions for fun and power.
If no bumber plates, do hang cleans/snatches. Pratice front squats as well with full range of motion.
If you want to be stronger overall, do trap bar deadlifts with low and high handles.

They're great compound lifts that I could make the center piece of my work outs. Also, like you said, they're good for power/explosiveness
