Why would you cut the fatty foods from your diet? Just cut the foods which have a lot of sugar & eat at a caloric deficit.
To get abs you should still work out your ab muscles not JUST cut

I still have a lot of cutting to do, but I'm not sure how low I should attempt to get before I switch gears from losing weight to building muscle.

I didn't start seeing abs until I stopped eating more than 100g of carbs a day. I thought it was a meme until I gave that a try, but now my abs are visible for the first time in my life.
