If I'm doing a 3 day a week 5×5, is it ok if I use a rest day or two to hit some of the muscle groups least targeted in the 3 big lifts and OHP? Like abs, traps, forearms, etc.

abs can be hit most days they recover faster and don't always apply by the 48-72 hour rule, i train mine 6 times a week resting them once and they've gotten a lot stronger

Hit each muscle with adequate volume as often as you can recover from.

Just add some chin ups/curls after your regular workouts. No need to do that on rest days. 3x8 curls alternated with 3xF chins won't hurt.

As a beginner do full body. Full body you can only do 3 times a week. Later go PPL or split which is all day er day.
