Hello, this is serious post.
I began doing cardio for the first time in my life (32). I now do up to 45 minutes at least 5 times a week burning at least 600 calories per visit to the gym.
I'm not sure if the difference is huge, but I do feel better, I am a different kind of hungry (stomach growls for food, not eating for pleasure), higher physical esteem...
But I really just want a flat side and I am not seeing that happen. I want rid of the love handles. I am 6'3" and I believe it is in part to my hips/bone structure being higher than most other men. Correct me if I'm wrong.
I eat well, generally look at nutrition labels. Anything from a mother or the ground. Veggies, fruits, fish, etc. Though I am not a food nut.
I would greatly appreciate any advice for flattening my sides. Also would like any personal stories if you've dealt with this.

It's generally tough to lose love handles, more so than other areas of the body. You'll need to have really low body fat overall. Cardio is fine but lifting burns fat even more effectively - so even if you're eating at a slight deficit, you should start doing it, and like anon said eat enough protein to keep building muscle (lean gains). You can do exercises that build up your external obliques. Build em up and it will make your sides appear flatter overall. Good luck.

Cardio is for cardiovascular health. It has no desire to make you lose weight.
If you want to lose weight, eat less food. If you are eating less food and still not losing weight, eat even less food.
