Not an exact percentage; but around 2-3%. It's a very safe surgery.
My ex's mom was in her 60s when she got her hips replaced and was pretty fine afterwards even though she wasn't in peak physical condition.
Also apparently she was told by her doctors that not making it due to anasthesia apparently happens to patients who have to frequently get some at that age. I couldn't really find any info on that subject so I don't know if it's bullshit or not though.

does him having a heart condition add to that? He has an extremely small aortic dissection, but his heart doctor signed off on the surgery.

A large majority of elderly people who get hip replacements die within ~2 years of the surgery. Considering that your dad is 58 and fat we'll just assume he has the body of a 65 year old. Even if he makes it through the surgery he's probably fucked in the long run.
