Are accessories actually needed if set volume of compounds is high? I'm talking 10 sets here

Depends on what you qualify as accessory work. If its purely isolation then no. If its shit like "lat pulldown" after heavy deads then yes you should do them for the added volume.

I usually do the 4 big lifts first then chin/pull ups, calves, curls, wrists, or whatever i feel is lackin that soreness. Usually not higher than 8 reps
