For real though, the body isn't a simple point and click interface. Stuff happens even outside of optimal nutrition, pretty fucking obvious, right?
If a person is starving to death the brain can produce glucose from everything available that won't kill the body to catabolise. Why is that? Surely you can't maintain brain gains if you aren't on a caloric surplus!?
Damaged muscle is repaired even while cutting on a pretty heavy deficit. Cell signalling isn't gunna suddenly stop because you aren't eating perfectly.
Those statements are scientific theory derived from empirical data. As with all scientific theory, it is not directly observed; that would make it empirical data. Just like euclidean geometry, relativity, and the Greek notion of a geocentric solar system, and the medieval alchemists' definition of fire as an element, it's our best guess as to the unobservable processes of observed data.
You can have the most sensible and sophisticated model ever devised for why niggies can't gain on a cut, but if niggies are gaining on cuts, niggies are gaining on cuts.
