Can I not just have half of my calories/protein before working out, then the other half right after working out, and not eat the rest of the time?
Also does sugar free gum have any impact on fat storage/blood sugar? There's like 2 calories per piece so ~0.5g carbs
The most important part is simply being active and eating well. Don't get so hung up on the details unless you're trying to get into competitions.

For the first question, sure. As long as you're getting it somehow...people here and elsewhere would tell you eating before is better than after, or after better than before, but it doesn't matter.
For the second question, probably. not. Though I'm not knowledgeable about sugar-free things.
