I'm 186cm x 110kg and I want to start doing cardio shit.
The problem is that I fear for my knees because I think running/jumping with the weight I have could be too much of a stress for them
Any advice?

EAT LESS. If you intake less calories than you burn you will lose weight, especially in your current weight and eating habits. Cut down to 1500Kc a day and you will lose a couple Kgs a week like nothing, you don't need any cardio. When you've dropped 15Kg start jogging.
