What is the vegetarian alternative to chicken macro-wise?
Only thing I can think of it eggs but eggs, rice, and broccoli doesn't sound great

My favorite way to prepare eggs for a stirfry is to cook a very thin layer of egg all the way through (without touching, like an omelet) and cutting it into pieces so you have large flat pieces of egg, set them aside, then add them at the end to your stirfry so they don't get destroyed while you're cooking everything else

Quorn chicken - fillets or pieces work just fine.
Regular chicken out-edges quorn, but not considerably so. Furthermore, quorn is a whole lot cheaper and takes minimal preparation. The only problem is there's a fair bit of sodium in it.

Depends on where you live. Chicken is cheaper than quorn for me.

In the UK (for me) it's £1 for a bag of quorn chicken fillets in Morrisons, or £1.74 for a bag of quorn chicken pieces in Aldi/Lidl. Dunno if you've checked in there.
