I am mega fat (170kg+ and 176cm) and I want to attempt the 30 day water fast, does anyone know if my skin will eventually snap back and I wont have excess skin, or will I be losing way too much in a small amount of time and I will permanently have excess skin?
Is losing like 2kg a week the only way to not have huge amounts of excess skin?

I know it's tempting but don't go for the "quick fix". You've acumulated this mass over years, you won't lose it in 30 days.
I know it will be painful, but start slow and lose your weight in a healthy way. This way you won't be worrying about lose skin.

I mostly just wanted to train myself with something that I can associate positively of why I am losing the weight, I guess it is cheating but I saw the results others pulled and I feel if I did the fast I would look back at myself before the fast and use that as extra motivation for not breaking my diet.

I've heard good things about 5 days eating 2 days fasting does anyone know if that is better or worse?

Some people need that first burst acompanied with rapid success to get going. But I fear that most people will lose motivation when they start to stagnate with their weight loss.

Also I'm generally against fasts, you'll need to clean up your diet overall. Find out what your caloric intake should be and use a calorie tracker to fullfill it. This way (measuring food, dividing snacks across the day, etc...) I re-learned what normal portions of food are and how much calories they actually have.

I think you're too big to hope for that. I'm pretty certain you will have loose skin regardless of how slow you lose weight.
Fasting can be psychologically helpful. Realizing through complete abstinence that eating isn't something that you absolutely need ought to help you change into a new lifestyle where you treat eating more dispassionately with cognitive control; if you can withstand fasting for a month, you can withstand some partial restrictions on your eating for the rest of your life.
Remember to take vitamins and minerals while fasting. Getting a little essential amino acids would be good too, I think. Drink water salted with a bit of both sodium and potassium chloride.
