Be honest /fit/, how "Stiff" can you get your legs during a stiff legged deadlift? Searching for it on google all I see is either terrible form and/or bent knees.
My hamstrings are fucking short from a lifetime of no sports/stretching.

That's because your hamstrings are weak af. When they can't hold the weight any longer, they start to give up and your pelvis rolls back to take away the stress. This causes the lower back to take most of the weight, making it round.
Your glutes and hamstrings should always take the most hit, otherwise your forms sucks.
