What would the difference between doing 3x10 and something like 4x7 be? My coach told me that because of my long arms I have to work more per rep and should therefore keep the total volume but lower the reps and increase the sets. Any opinions on this? How will this impact my progression?

the difference probably won't be noticeable, and you'll probably get more quality reps in with the 4x7
if you have long arms (assume we're talking about bench here), consider doing a lot of bodybuilder pump work for your upper body, the more jacked you are 1. the higher your strength potential 2. the less horrible your leverages will be
why not both? 3x10, then 4x7 with an heavier weight, then 3x10 with a slightly heavier weight than the previous 3x10 and so on...

I personally don't get a lot out of incline bench, I mainly feel it in delts but that might be due to shitty benches at my gym that are inclined too highly
DB bench done for high reps like 12-15 feels the best to me, also if your gym has a pec deck or a machine fly, take advantage of those, I think they work a lot better than DB flyes or cable crossovers if you have very long arms
