Is being "on a program" really necessary?
I lift full body three days a week, doing compound movements (squats, deadlifts, bench press, pullups, etc.), run on the off days, and take Saturdays off.
If I'm seeing consistent progress and not leaving any key movements or body parts out, is there really any point of moving to someone else's system?

If you are in the first couple years no. So long as you lift heavy and often it doesnt matter. When you progress and progression slows down then yes it helps optimize your workouts to get gains.

I'm not fucking around doing random shit, though. I do 3 sets of 6-8 in bench press, shoulder press, bent-over rows, pull-ups, dips, squats, and deadlifts. My lifts are going up and I feel like it works everything it should.

Are there other programs other than 5x5 SS or 5/3/1 shit that work?

I love lifting, but I cant lift heavy on barbells because i have no spotter.

The title of the part of 'Practical programming for strength training' which deal which the novice is 'Everything works. Some things work better than the others'. If you re a beginner you can progress well on anything, but it wont last forever. The more advanced you get, the more tricky the routine programming becomes.

In short, a program is not necessary, especially for the elite and seasoned bodybuilder

It's like being a skilled artist ..... when you start painting you might use pencil sketches to paint over, but eventually you will just skip the sketches and get right into the painting and deliver a masterpiece.

This is all very logical if you think about it.

on what exercises? the only problem i'd see going heavy without spotter is bench and even then you could do roll of shame depending on weight or simply not go to total failure but stop when you know you will struggle on next rep.

can't you ask random people at the gym to spot? doesn't your gym have power rack?

That is absolutely not how he started, or was at the intermediate level. Arnold's beginners program is called the Golden six and is a full body routine he learned in the first gym he went to in Austria.

For bodybuilding, not really, just lift with some basic rules, amount of sets,rep ranges and such.

Also, according to 5/3/1 you need to add weight every week to your PR, wont that grantee death by barbell without a spotter on bench.

I do something similar. Big 5 plus front squats 3 days a week. Moved into TM but but decided to bench more , then decided to do DUP 6 main lifts 3 sessions, fuck off the machines and just do some pull ups and curls etc. Depends on your goals, if you want to get strong or look buff prob best to follow a professionals advice. I just like the old 1950- 1960 old school stuff.

You need to train regularely and keep track of your progress. I progressed more in a month doing SL 5x5 than in a whole year fucking around.
