Alternate 1 week strength 1 week hypertrophy. Also recommend lifting more than 3x per week. You should hit everything 2x per week.

I don't fail, but it takes me a super human effort to get my sets done, and I have to rest like around 5 minutes because 3 isn't enough for me

Deload. Sounds like you're lifting more than you can actually handle. I suggest taking a video next time and posting it here for a form check as well. Until you get to around 3pl8, you should not have to give it your all to finish a set.
