Is there a sport or competition you can start at 30 and get world-class ability in assuming you're fit/gym rat already?

I think fencing, golf or tennis would be your best bets. Honestly though, ability comes down to mostly talent and practice. Talent's a matter of luck and anyone who's been doing a sport since they were a kid will have a shit ton more practice than you.

You need roughly 10 years to (world-class) master something, would it be chess, boxing or chess boxing.
If you start at 30 you'll be 40 after 10 years of work, in a lot of sports you can't even compete with 25yo when you're 40.
Also remember : gym training is absolutely shit tier for a lot of sports.
