I can still deadlift, but I can't squat, leg press, or leg curl. Would biking help maintaining quad muscle mass?
Biking is a great option yes. Uphill biking especially.

Biking yourself to big legs takes an insane amount of work. All those bikers who have huge quads got them through dozens of hours on the bike per week.
It's not impossible, but it's going to be pretty fucking rough.
