Broccoli + peppers are your friend.

1-2 tbsp olive oil on medium heat in a skillet. Add broccoli, peppers, salt + pepper. Cook 2-3 minutes. Add 1/4 cup chicken broth. Cover and let steam/simmer on low heat for 5 mins.

I like to add hot sauce too.
