I do them with rice and the ink, but it's reserved for special occasions because of the price. Shrimp used to be common but the price has also gone up. Now I'm stuck with more regular types of fish. Could be worse.

Not a fan of calimari. But i love octopus sashimi. Octopus tastes way better than squid, squid tastes pretty fishy octopus is much more mild

Iirc squids have a realtively short lifespan so they probably dont accumulate much mercury but you should probably google it

Alternatively buy a pig, feed the seafood to the pig, the pig's digestives system will filter out the mercury and know you can eat the pig.
