Oatmeal pancakes, if you have time
Cottage cheese with cucumber/carrot/bell pepper/whatever stixks
Complex carbs,like diy muesli
Eggs, egg whites if you want to be anal about it

Mostly see for yourself what makes you feel good or fills you up,

Not suddenly make food into fat.

Carbs are only relevant like that when bulking. Yes, insulin is key into whether or not your body decides to store fat or not, however, this is not important when BULKING. If you are cutting whether or not you eat carbs is irrelevant bc abuse your body will not store what you eat, since you're a a deficit and will burn it all. This is why during bulks that it's suggested to eat your carbs earlier and separate of your main courses with protein. If you eat at a surplus, and you eat a lot of carbs during your largest intake, then yes, there's more likelihood that it will be stored as fat.
