I don't really track calories. Seemed like a big headache and didn't matter too much in the end. So long as I only eat low cal food and only eat every 6-7 hours unless I worked out recently I figured it didn't matter too much.

Things that work in the beginning will plateau eventually. I did something similar for years on end, because I couldn't be bothered with tracking my calories. I'd previously gone from 102kg (at 178cm height) to 77kg, and stalled for a good year or so, doing the same thing I'd been doing. My lifts slowly went up, but my weight fluctuated within the 76-78kg range.

Since January I've been cutting at a 500 kcal deficit with the aim of losing 0.5kg a week. It's been working so far, but only because I readjust my calorie intake as the weight drops. As I lose weight, I need fewer calories if I want to keep losing the same amount of weight every week.

Tracking calories sucks for the first week. But once you get the hang of it, it becomes easier. Get a kitchen scale, weigh your food, and don't cheat. Weight loss is ultimately calories in vs. calories out, and unless you know what your TDEE vs. calorie intake is, you're going to have a slow and hard time losing weight.

There are also plenty of phone programs that'll help you track what you eat, but I personally prefer the pen&paper way. Keep those, along with a kitchen scale and a calculator, in your kitchen and you'll see results.

If you sit on your ass after eating the ice cream then it'll be stored as fat. So either only eat it before exercising or maybe replace it with low sugar yogurt. Good luck my dude you're doing well.
