Not worth doing this for chicken thighs. It works out cheaper just to buy the skinless/boneless chickens thighs because skin on is >25% fat and lean is usually <20% more expensive than skin on.

Mince meat it is usually double the price per kilo for the lean version but that probably includes better cuts.

That is my take on it. Even if it is slightly more expensive to get lean stuff, the hassle of fucking about draining fat isn't worth it. Makes a huge mess and fucks your pipes.
