I'm wondering how I should train during the off season. I'm 165lb average, and want to wrestle at the 195 weight class next year. I did starting strength last summer and made decent gains. I haven't done any weight training since mid November though.

If you want to put on weight do TONS of volume on all your lifts.
Save the strength training for closer to the season, right now focus on bodybuilding and general cardio.
Closer to the season work in more relevant conditioning and strength/explosive movements.
Since you're going 195s, focus on conditioning and strength, a little more on conditioning. Most guys on the heavier classes gas out by period 2 or 3 and you can capitalize on their exhaustion and have matches in your favor if you condition yourself.

Kek this pic brings memories. I hit puberty after training rassling for 7 years or so, started at 5 yrs old. The sheer homosexuality of the sport and wearing spandex with bulging dicks made me really really really uncomfortable. Also the coaches were constantly pressuring to compete with weightclasses and other shit which a 13 year old didnt find really fun at all. Man glad I quit, I avoided the cauliflower ears even.

While this guy is right, some guys in 195 will pummel you to shit in the first period if you're not strong enough.
