I care about the environment. Thats why I mantain my carbon footprint low even while eating meat. Also I do not intend to have more than one child. If you are OK with 250-350g of mostly complex carbs, just do what >>40029657 said and also quinoa. If you want to be below 200g, you'll need to eat a fuckton of: tofu, tempeh, seitan (mix with beans for complete protein), mock-meats and nuts (high calorie but since you're aiming for 3000kcal that should not be an issue) and of course protein shakes.

I managed to do <100g of carbs and >150g protein while losing weight, ate about 1700-1800kcal per day and avoided mock-meats as far as possible.
Just eating a scramled tofu for breakfast and downing a protein shake gave me about 90g of protein.
