I just went on about a 6 week holiday without once hitting the gym and eating pretty averagely. Seem to have lost about 33% of my strength gains and visibly lost about 25% of my muscle mass.
Gone from average strength, almost look like I lift with my shirt off, to below average strength, don't even look like I lift. Feels bad :'(

That's broscience as fuck. Your hormones are constantly both anabolic and catabolic. Muscle constantly deteriorates (and always grows if you're using it).

I think he was speaking more about a net result of muscle wastage over time. You don't make the same criticisms when people talking about gaining muscle, do you? We're talking about an average, significant increase/decrease over a reasonable amount of time.
And technically speaking, you will almost always be in an anabolic or catabolic state at any given time, not both. Using insulin and glucagon as an example, even if both are present in circulation, a number of factors will make one be the predominant substrate that enters into a cell, which will overall cause anabolism or catabolism. Personally I notice a visible difference after a couple of weeks, less if I'm ill.
I took 2.5 weeks off recently and lost 10lbs off most of my lifts

Strength gains or muscular atrophy sit somewhere between 8-14 days for onset. I'm sure CNS atrophy is faster, but muscular would be about a week and a half to two weeks. It's why you can look good after a rest but lose 20lbs on your lifts.

Yes but this will still have a net effect of an increase or decrease in body mass, if we could measure this finely enough, you would see that your fat free mass, body fat, etc, is constantly in flux, and doesn't really stay the exact same for long
