When they used keto for epilepsy they would make them fast 24-48 hours before feeding them eggs. I do targeted keto and it takes me about 12 hours to get back in, although ketostix aren't very accurate.

It's not really an on/off thing. It's more like at the start, you're using 95% sugars for energy. Then it slowly drops until you're burning almost solely fat. You never really hit 100% but 18 hours will get you close. This happens even if you have muscle glycogen left.
It's complicated dude. Just eat at a fucking deficit.
