What are some good body weight exercises to do while waiting?
I have been consistently training for over a year, never taking a break this long and mentally I don't particularly feel good about taking a break this long.
Would it benefit me if I just completely relax for a week but continue eating well?

You want lose any muscle if you take a week, though. You can relax.
