When people say they can run a mile in 6 or 7 minutes, do they usually mean that's the fastest they can run one mile or that they can keep that pace for a lot longer?
I can do a mile in between that time for sure, but there's zero fucking way I'd be able to keep it up. So what's the deal?

Generally the pinnacle of mile pace is a 4 minute mile. Very few people can achieve it. It's just a way of gauging that specific brand of endurance training. It's like saying you have a sub 11 sec 100m dash

Some people can do 5ks at around 15minutes (5min per mile). In my opinion 21 minute 5k (7min per mile) is A okay in my book. Others might have higher standards though. Just get some mileage by jogging 4/5 miles and then have a day where you do short distance but sprinting

I can run a mile in 5:30 at my fastest but if I'm just running on a normal day where I do 5 miles, i'm sticking closer to a 7:30 pace

In case you're still here, how long have you been running to be able to keep it up at 7:30 over a 5m stretch?
