The thing is my metabolism is absolutely fucked, is there a way to fix it? Any info graphs on cooking would be great too

I posted earlier today that metabolism is a mechanism of diet and exercise. A lean, clean diet will help promote eating many smaller meals throughout the day.
A regular exercise program will create the oven that burns the fuel you feed your body in those meals throughout the day.
Think of metabolism as a gigantic steam engine train. They take a while to get going. Once they are going, they don't take too much to increase their speed as long as you keep feeding them fuel (the right fuel). Just keep in mind that the more fuel you intend to feed, the more work you need to build up to.
This is roughly how it works, and yes, everyone's body is completely different. Start visiting /fit/ in the AM, also.

I wouldn't worry too much about short term jumps in weight. Water retention, how much poop is in your intestines, etc etc can have a big impact. Especially if you're going from a crash diet to a moderate bulk.
Even if your metabolism is janky by a few hundred kcals, you can't cheat thermodynamics.
