Can I still gain weight/make gainz? I been trying for 2 months like this with no luck. Still dont understand the link between sleeping after midnight = good sleep and sleeping at sunrise = bad sleep.

You need to fix your circadian rhythm. Eat a big meal at the time you want to ideally wake up, do a 24 hour fast, then eat a meal at that exact time again and then stay up until the time you want to go to ideally go to sleep. It will be tough but this pretty much resets your internal clock

Try it and see. Even if it's broscience, the placebo effect might help.
More likely broscience that'll make you feel like you're taking positive steps if nothing else:

Yes is a religious thing.
Fasting is to substain for eating for a certain period of time.

Even Muslims during certain holidays will fast from sun up to sun down and break their fast before the next morning aka breakfast.
