WHY the fuck am I not progressing /fit/???
I'm eating 3500+ calories a day (healthy foods with protein), putting on weight scary fast (0.5kg a week) but actually getting WEAKER in my lifts which are COMPLETE GARBAGE TO BEGIN WITH.

6'1", 70kg.

take a deload week my friend. you should be taking them every 4-6 weeks. work at around 70% of your 5RM or even less during it.

To be honest I don't FEEL exhausted, I never get DOMS, I can do high reps low weight, but my muscles just crap out under heavy weights.

2 or 3 sets of 5 is enough. deload week should be about recovery and not about lifting as much as possible. you should get some work done but not so much as to mess with your recovery.

after you are done with deload week you generally start about 10% less than what you were lifting previously and ramp it back up over 2-3 days and after that you generally get new PRs.

Your progress is fine. Your expectations are just too great. Just be a bit more relaxed with the progress, don't add so much workout to workout. And everyone has bad days.

And you don't need to eat so much. If you keep it up you'll be dissapointed in a few months where you look worse that when you started because you're now fat. 0.25kg or a little more a week is preferred.

OP here - I'll try a deload week and then will continue patiently for another month...

On a related note I've noticed a possible problem with the bench press due to my build, when I touch the bar to my chest my upper arms are forming about a 30 degree angle downwards which gives me a mechanical disadvantage at the bottom of the movement. This is because my forearms are much longer than the thickness of my chest. Should I do half-reps so I'm not going lower than horizontal, or continue as I am?

Learn how to arch and how to get your chest up big.

Only go as low as your mobility allow you to go, so don't overstretch your shoulders.

You're over thinking it. Go all the way down and all the way up (LIGHTLY locking your arms out) if you want to develop your chest properly.
By the way, make sure to get your protein in and get enough sleep every night
