Last time this happened I just stayed at the caloric surplus and lifted the same weight until I got the form right. Is that the road to snap city? What do you do in this situation?

As a beginner, one thing that you have to learn that your body isn't a machine and will always behave somewhat inconsistently.
Try again, if it's too heavy, it's too heavy and you drop down the weight and still(!) try to get the maximum out of that particular training session, whatever the weight may be.

If you've stalled multiple timese, you might consider adding in pause work to work on staying tight at the point where you are rounding
