As a skinny but lean beginner, is it better to do 3x8 sets or just keep it 5x5?

No. Research have shown that there is no hypertrophy range. It's dependant on the amount of sets that you take to failure or close failure. So 5x5 would theoretically stimulate more muscle growth if those sets were close to failure.
