I'm talking 1000-1500kcal under a day.
Will you simply lose fat faster or could I be hurting myself?

A good number of people do it, and have done it, it works for them, i did two weeks of it and gave pretty good results. Do your own research and decide.

The general consensus is that for most people, about -1000 is the most you want to do.

If you're REEEALLY fat, like +100 pounds or more, then you can get away with more.

This is ridiculously over stated.

Pretty much as long as you eat enough protein, lift and are above 12% bf you'll lose almost no muscle.

Muscle loss on a cut is indeed grossly exaggerated. Lift heavy things, eat sufficient protein, keep most of your muscles.
